Easter is coming fast and you are excited to see the sweet smiles on your children's faces when they search out their Easter eggs and dive into that glorious basket filled with crunchy, sugary, chocolate, gooey goodness.

But, what about you? You deserve a treat, too!

No need to get up extra early for this delicious treat! You need just 20 minutes to create your very own Easter Surprise.

Three Cheers for Carrot Cake Scones! Grab a Gingerbread or Ginger Lemon Scone Mix and let's get baking!

Oven 375 degrees
The Scone Goddess Premium Gingerbread or Ginger Lemon Scone Mix.
1 cup grated carrots
1/3 cup raisins (optional)
1/3 cup pineapple bits (optional)
1/2 cup pecans (optional)
1+ 1/4 cup heavy cream

Add mix, carrots and fruits to bowl and stir. Fold in the cream. Form into a 5 inch disc. Cut into eight triangles and place on a parchment paper lined baking sheet. Make sure they are not too close together. Bake 18-20 minutes or until light golden brown. (Oven times vary.)

1/3 cup cream cheese
1 tsp vanilla
1 TB water
powdered sugar to desired consistency. (Some like frosting. Others like glaze.)

These are incredible warm. You might even get your kids to eat their vegetables this way. :)
